Greetings, Coffee Crew!
This morning’s cup of java is Big Mountain Blend. The citrus notes, medium body, and overall sweetness pair beautifully with lemon bars or fruit salad. I would love to hear your choice for morning coffee.
What is the right level of inventory? That is the million dollar question and there are several variables. Seasonal items, perishables, volume of usage are just a few things to consider. Tanya and I have asked you to be sure you have at least a 7-10 day inventory of coffee and espresso on hand when you order. The amount you need will vary according to seasons and customer demands.
Consider this – my Schwan’s driver was out of a seasonal summer item – Frozen Lemon Yogurt – because the company only makes a certain amount and it is gone already. I said, “it is only August”. Goodness sakes, it is still summer! You don’t want to have this happen in your business. Be sure you have enough of what you need on hand.
If you do run out of something, be sure to suggest a replacement. For instance, if you are out of French Vanilla syrup, try Caramel instead. Sometimes, the customers will appreciate a new drink and will appreciate your efforts to make what they would like.
Another thought on signature drinks… Be sure they are your own. Take a basic drink and add special, “secret” ingredients. Your signature drinks will be a hit with your customers and you can charge a little more for them, increasing your profit margin. I suggest a hot and cold specialty drink for this purpose.
Marketing: I recently stopped into a customer’s shop and saw a display with sunglasses for sale. Wow! Their coffee shop is in a tourist area, on the lake, with resorts and RV camps all around. Great idea! Some products and ideas work and some don’t, but always consider what your customers may need or want in your area.
Grab bags are another idea that has been successful in many retail businesses. If you have an event planned, have grab bags available at a couple different prices. You could include coffee or tea samples, discount or free drink coupons, prepaid coffee cards, etc.
Maintenance on your equipment is one of your most important investments in your business. Your espresso machine and grinder are what keep you going and deserve your TLC. My roaster, “The Bean Queen” is cleaned every day and receives a major “tear down” cleaning at least once a month. I know very well that I am out of business if my roaster isn’t working properly. Same thing for you and your equipment. As I have said so many times, “if you are out of coffee, you are out of business” and that applies to the equipment as well.
Speaking of well used equipment, how about your coffee cups? Do your coffee cups show signs of friendships and long chats? Check out the stains, and see what they reveal. Remember, we’re “bringing people together with great coffee”.
